You can somewhat but some features you still have to use the touchscreen for, like heated seats wheel, etc. plus using those controls behind the shifter while driving a manual is a pain in the ass. I'm all for removing computers and smart shit from cars and making them like they used to be. At least they just worked.

When you start the car the heated seats and wheel are on the start up page, but yeah there is a push to remove buttons for optional features that have no safety implication. If we had hard buttons for everything you're dash would look like a giant keyboard. You car is still better than anything from Cadillac, Mercedes, BMW, etc. Almost everything on those is configured through the screen and controlled by a joystick.
