Pretty much can't be done, you just jackknife, unless you have all the powers of a Hollywood effects dept. behind you. As it is, doing it bobtail with a cab-over is pretty easy. Think about it, all the weight is up front. The cab hangs over the front bumper, and the engine is just behind the front axle. Cabovers are downright dangerous because of that. The least little bit too much pedal in a curve while bobtail, and they just spin right out. With a single axle like that, you can even flip them forward with too much brake.
