Frying my 1st turkey

Make you sure dry it completely and get all moisture off the turkey before the plunge.

 

I used the 'alton brown' method this year -- preheated oil to 250, dropped the turkey and set the thermo to 350. Worked great, was much less commotion/risk overall I think. Took the same 45 minutes it always has, and I didn't need to obsess about drying the bird.
