Take a punch and bend one of the last threads on the set screw just in one spot just slightly. When you put the bolt in it will lock on the last thread that you damaged and will not come out until you want it too.

 

That will work for steel on steel.

 

If you are putting a steel set screw into an aluminum part, put the set screw in and then take a punch and slight dimple the last thread above the set screw. It will lock the screw in and when you want to remove you can and as the bolt comes out it will fix the threads since they are softer than the bolt
