  1. For those of you interested in my ongoing experience with the dental school, I'm excited to report that my treatment plan is complete. I started with the dental school in September 2006 after several years of severe dental neglect and very poor hygiene. I chose to go there specifically because of price, procedures are typically 50-75% less than average private practice. Since everything has been taken care of out of pocket the necessity for savings is clear. I've had lots of work done: 1 crown, 5 large cavities in molars (a few were old fillings that were leaking and decayed underneath), ~8 other cavities, 1 benign tumor removed from under my tongue, and 2 cleanings. I still have two wisdom teeth to come out, but I haven't decided when I'm going to have this done. My experience has been very overwhelmingly positive. I have had two dental students, the first from October 2006 to May 2007 when he graduated. The second from August 2007 to current. The transition over summer break to the second student was flawless, they take an appointment to examine you and re-evaluate your treatment plan, then the work continues. I've only had two issues: I had one filling done by my first student that later chipped and needed to be re-done. A second, also done by my first student, had a gap in the filling and was causing me some discomfort, they caught it on my re-evaluation X-rays, it was redone and now perfect. I highly recommend the dental school to anyone who needs to get work done and doesn't have insurance. I will continue with my current student until he graduates next June, after that I will have long had insurance through my wife and I will switch to a private practice. The dental school has allowed me to get right at minimal cost and I will always be thankful for that. A word from the experienced, even if you brush regularly and have good hygiene but haven't been to the dentist in a while, get in to see one as soon as possible. Beyond my teeth issues, they caught a tumor which could have turned out nasty if it wasn't caught early. Going to the dentist is important and I will never neglect my dental hygiene again. If you're in the position I was in two years ago, go to the dental school and get checked out. The earlier you catch issues the better. If I had waited much longer I would have lost at least two teeth, but thanks to the school, prayers, and a little luck I still have all of my teeth and did not need any root canal work.   13. Dinner was a raging success (as usual ). The lava cakes kicked ass, but I gotta mess with the recipe a bit more to get them where I want. As far as tilapia, yes it is a carp. However, farmed tilapia doesn't eat a diet any different than any other farmed fish and while not as nutritious as a wild caught white fish such as grouper, it's completely sustainable. I have my ups and downs on farmed anything but the fact is, we have to eat more farmed seafood because we're ripping our oceans apart with over fishing. As long as they are farmed pretty much anywhere but China they're perfectly safe and I'll eat it.

    This is categorically wrong to the extent of being offensive. If I could never have sexual contact with my fiancée again, I would still marry her and I would always be faithful. Marriage is about so much more.
  15. Just thought of one more tilapia (or any mild white fish, grouper, etc.) recipe you might dig. Make a foil grilling wrap and coat the inside with sesame oil. Chop 1 small head of bokchoy and 1 red bell pepper (sliced thin and long) and put them in the wrap. Add the fish on top of the bokchoy/peppers and sprinkle with fresh ground black pepper. Add coarsely chopped scallions and orange zest. Mix 3 tablespoons low-sodium soy sauce, 1.5 teaspoons rice vinegar, and 2 teaspoons ginger then spoon over the mixture. Close up the foil bag and grill. Serve that up with some coarsely chopped carrots or whole string beans sautéed with a bit of oil and any spicy peanut-sauce recipe (look for one with chili pepper or chili sauce in it) and you'll get laid for a week.
  16. Bake at 350 for 30-45 minutes for a small-medium filet, or up to two hours for a whole fish. If you don't like it to be very lemony (I love lemon) then leave out the lemon and just do it in the salt, then at the end after you've broken off the salt crust just squeeze some lemon juice onto it. Also, drizzle a little olive oil on the meat after you've broken off the salt. You will cry.
  17. Cooking is easy. Try a few fun recopies and before you know it, you'll be creating your own stuff. I'm lucky on the pickiness, I'm not picky at all and my fiancée isn't either. She's only a little weird about meat, I have to make sure I cut off any large amounts of fat (which I do anyway, except for nice steaks). Occasionally she won't like the "look" of a piece of meat and she'll cut that part off. But otherwise, I've worked her spice tolerance up to my level so I can make things as I want to eat them.
  18. That sounds pretty good! I love tilapia, it'll take just about any flavor you put on it. One of my favorite ways to make tilapia is with lemons encrusted in salt. You basically lay it out with thin lemon slices over a thick bed of kosher salt, then more lemon slices on top and cover the whole thing with more salt and then bake it. The salt cracks off and the meat in the middle is FANTASTIC.
