Richard Cranium
Isnt the co2 what keeps it good for more than a day and the bit of carbonation?...everytime ive had keg beer, right from the place, it never tastes as good as what i get on draft at the bar Air causes beer to go stale. That's why when you use a party pump the keg is only good for a couple days before it starts to taste bad. CO2 is a natural process of the fermentation, so pressurizing it with CO2 not only works for dispensing, but also for keeping it fresh. With a setup like that you could keep a keg going for about a month before it started to go bad. Depending on your tolerance for skunky beer you could even keep it around for a couple months.
