Talk me into or out of buying another bike

I would say to buy the SV. The engines are almost bulletproof and they'll last for quite awhile. And since you're wanting to do track days, get the SV out there on the track. It'll be more fun than the STI could be on the track (in my opinion), and it'll be more cost effective. Cheaper to re-build/fix if you crash it and the feelinging of draggin your knee in corners. You could only do that in a car if you were hanging halfway out of the car in turns, which isn't very safe.

The STi would be a lot safer to crash, though. If I crash i'f rather have full gear and a car shell to protect me than just having full gear.

I'm leaning towards buying a SV or a cheap car to DD, taking some HPDE courses in the STi, and slowly building the STi up to street-legal track car status.
