Thanks! I love seeing the recipes that others make over and over again...

Chachi, the Tiki Masala doesn't look too hard. I'm going to try it some time but what kind of yogurt do you use? Just plain unflavored, I assume?

Yup plain unflavored yogurt

Don't get fat free, it makes the dish taste like total shit (at least in my opinion)

I don't know the real name for it...but

Chicken Suprise

1 1/2 lbs chicken breast

1 can cream of chicken soup

1 can cream of mushroom(or cream of celery)

1 med container of sour cream..I use low fat

1 med onion (optional)

1 can Stove Top stuffing

Cook chicken, cut into med. chunks and layer in bottom of a cake pan

Mix soups and sour cream together.. add onion (chopped fine) if you wish

Pour soup/sour cream mixture over chicken chunks

Cook Stuffing extra moist and top over soup/chicken

Cover with foil and bake 35 mins at 350..

Serve with nice soft dinner rolls..

Ok, here's another quick and easy recipe that uses up any leftover chicken you may have:

Chicken Fried Rice

  • 2 eggs
  • 1 tablespoon water
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cups cooked white rice, cold
  • 2 tablespoons soy sauce
  • 1 teaspoon ground black pepper
  • 1 cup cooked, chopped chicken meat

  1. In a small bowl, beat egg with water. Melt butter in a large skillet over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds.
  2. Heat oil in same skillet; add onion and saute until soft. Then add rice, soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then stir in egg. Serve hot.

Super easy cajun style dirty rice.

This is for a BIG BATCH.

2lbs Italian sausage (I get the 1lb 'tubes' but you can use links if you skin 'em)

1 big ass onion (think softball) chopped

2 green peppers chopped

6 cans of beef broth

6 cans worth of instant white rice

Start to brown the sausage and add the onion

After sausage is brown, add peppers.

Add beef broth and bring to a boil

Add rice and remove from heat, stir and cover.

Wait 5 minutes or so and PRESTO! delicious dinner!

This can be scaled for smaller portions.

Different meats can be added/substituted. Suggestions: Cooked chicken, shrimp or smoked sausage.

I made this last night. It was delicious and easy!

Mushroom and Chicken Orzo

INGREDIENTS

  • 1/2 cup butter, divided
  • 8 pearl onions
  • 1 cup uncooked orzo pasta
  • 2 cups sliced fresh mushrooms
  • 1 cup water
  • 1/2 cup white wine
  • garlic powder to taste
  • salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley
  • 1/2 the meat pulled from a small rotisserie chicken

DIRECTIONS

  1. Melt 1/2 the butter in a skillet over medium heat. Stir in the onions, and cook until golden brown. Mix in orzo, mushrooms, and remaining butter. Cook and stir 5 minutes, until butter is melted and mushrooms are tender.
  2. Pour water and wine into the skillet, and bring to a boil. Reduce heat to low. Season with garlic powder, salt, and pepper. Cook 7 to 10 minutes, until orzo is al dente. Stir in the Parmesan cheese and parsley to serve.

Sausage Balls

As far as I know, it's a southern thing. It's more of a breakfasty snack food/finger food. Back in high school, during bus trips for away games, the moms would make these and put them in tins for the team to snack on.

1 - pound of ground sausage

1 - cup shredded cheddar

2 - cups Bisquick biscuit mix

3/4 - milk

Mix all ingredients together.

Roll into quarter size balls.

Place on cookie sheet and bake at 400 degrees for about 10 minutes.

I made these for a carry in at work this morning....

Let's just say my balls were pretty popular :D

Deer Jerky Recipe:

3/4 cups of soy sauce (when doubling the recipe 1.5 cups is equal to 10 oz or the bottle soy and others normally comes in, or 12 oz)

3/4 cups of worchestershire sauce

1/2 bottle of liquid smoke

2 tsp seasoned salt

2 tsp Accent

2 tsp onion powder

2/3 tsp garlic powder

2/3 tsp black pepper

1 tsp Tabasco sauce

2 tsp sugar

slice the meat 1/4" thick or use burger

marinate 24hrs

Enough for about 2-3 pounds of meat

Put 4-6 big boneless skinless chicken titties in a crock pot. Add 1 can chicken broth, 2 packets taco seasoning and 2 packets hidden valley ranch mix. Leave crock on low or medium till chicken temps out, then shred breast with forks and make tacos. They're incredible.

OK, 1lb Italian sausage, 1 lb 90% beef. Crumbled cooked. 1 pk lasagna noodles cooked, 4 cups mixed Italian cheeses, 4 cups mozzarella cheeses, ricotta or cottage cheese plus veggies. Layered in 5-6 layers in a pan baked @ 350~30 min..

Let cool for 20- 30 Min. Serve... awesome!
